Beyond the Chicken: Unconventional Uses for Broaster Equipment

For decades, the Broaster name has been associated with reliable, kitchen work-horse pressure fryers that crank out load after load of crispy, juicy fried chicken for our operators all over the world. Maybe it’s decades of history, or maybe it’s a connection to our Genuine Broaster Chicken trademark program, but when many think “Broaster,” they think “chicken.”

Granted, chicken does come out superior when cooked in a Broaster Pressure Fryer. It’s crispy and juicy, but not greasy, after all. However, we have witnessed our Broaster Equipment used in all sorts of “unconventional” ways to help our operators serve delicious products.

 

Tortilla Chips

Even the simplest of products can be improved in a Broaster Pressure Fryer. Our Operator in California facing rising labor costs needed a solution to help alleviate this increase in expense. Their solution: turn to a Broaster 1800 Pressure Fryer for frying their tortilla chips. Switching from an open fryer, the operator was able to cut their total tortilla chip frying time from 4 hours to 30 minutes. At $20 per hour, a 3.5 hour per day labor savings equated to almost $22,000 in annual labor savings alone.  In addition, the reduced frying time and on-board oil filtration extended the life of their frying oil, cutting their oil requirements from 6 jugs per week down to 3 jugs per week. At $65 per jug, the result was over $10,000 in oil savings annually. Thinking beyond chicken saved this Operator nearly $32,000 per year just in labor and oil alone.

Smoked Tofu

A vegan chef in Seattle looking for large-scale production of smoked tofu turned to the Broaster Smokaroma Pressure Smoker for her manufacturing facility. The Smokaroma Pressure Smoker smoked tofu faster and more consistently than conventional smokers on the market, increasing her production capacity while still meeting her quality requirements.

Pork Chops

Pork: the other white meat. Although if not cooked properly, pork chops run the risk of being dry and flavorless. Broaster has several operators who have joined the fight against dry pork chops by frying them in a Broaster Pressure Fryer. With a light crispy crust on the outside and juicy on the inside, pork can be done to perfection in a Pressure Fryer. Plus, Broaster offers Ribite Marinade that can be used to marinade pork chops for perfectly seasoned, tender pork products.
